This summer certainly doesnt sound like it is going to be a fantastic one for people wanting to actually get away from the UK thanks to the strikes that are occurring and the worry that perhaps the volcano in Iceland might keep erupting during the course of the year but if you are lucky enough to get away then you need to go to somewhere different, why not actually go to a place where you have never been before. Although this is by no means what everyone is doing this year it pays to be different so it is certainly well worth a try?

Mexican food is certainly one of my personal favourites in the world, I am yet to try one of them that I do not like as of yet. I learnt how to make many dishes when out on my Mexico holidays and here is what I would serve up at a dinner party if I was doing a Mexican theme.

Chilaquiles

These are pretty much nachos but the American cheese and beans are taken away and you have nice toasted tortillas covered in either green or red salsa ( I have seen a mix of the two) with shredded chicken and sour cream. Read the rest of this entry »
